1 lb (500 g) extra lean ground beef
1 pkg Old El Paso* Smart Fiesta* Hard Taco Dinner Kit
1 can (398 mL) no salt added tomato sauce
1 small red pepper, chopped
1 can (12floz/341 mL) Green Giant* Niblets* Whole Kernel Corn, drained
1/2 cup (125 mL) sliced ripe olives
1 cup (250 mL) thinly sliced romaine lettuce
1/4 cup (50 mL) shredded reduced fat Monterey Jack cheese
1/4 cup (50 mL) shredded reduced fat old Cheddar cheese
Heat oven to 350ºF. In large skillet, cook ground beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain if necessary.
Meanwhile, heat taco shells as directed on box.
Stir tomato sauce, pepper and corn into ground beef. Cook 2 to 3 minutes longer, stirring occasionally, until mixture is hot and bubbly.
Spoon about 1/3 cup beef mixture into each warm taco shell; top with olives, lettuce and cheese.
Tip : Serve with grape clusters and banana smoothies. To make smoothies; blend frozen bananas with ice, milk and vanilla malt powder.
