  • 1/2 lb (250 g) extra lean ground turkey or chicken (or extra lean ground beef)
  • 1 pkg Old El Paso* Smart Fiesta* Hard Taco KIt
  • 1/2 cup (125 mL) water
  • 1 small onion, chopped
  • 1/2 green or red bell pepper, chopped
  • 1 can (19 oz/540 mL) black beans, drained & rinsed
  • 1 can (12 oz/340 mL) Green Giant* Niblets* Whole Kernel Corn
  • 1 cup (250 mL) shredded reduced fat Cheddar cheese

  • Brown ground turkey or chicken in large nonstick skillet over medium-high heat; drain.
  • Stir in taco seasoning mix, water, onion and green pepper; cook for 5 minutes, stirring often.
  • Add beans, corn and taco sauce to skillet. Reduce heat to medium-low and cook for 8 minutes, stirring often.
  • Heat taco shells according to package directions. Fill heated shells with taco mixture and top with cheese.

    Substitution : If you prefer soft tacos, use Old El Paso* Smart Fiesta* Soft Taco Kit.
    Variation : Experiment with a variety of beans such as chickpeas, red kidney beans or even lentils.
