Ingredients:
1 cup (250 mL) uncooked bulgur
1 cup (250 mL) boiling water
1/4 cup (50 mL) orange juice
2 tbsp (30 mL) olive oil
1/2 medium unpeeled cucumber, seeded, chopped (about 1 cup/250 mL)
1/2 cup (125 mL) chopped red onion
1/2 cup (125 mL) sweetened dried cranberries
1/3 cup (75 mL) loosely packed fresh flat-leaf (Italian) parsley, chopped
1/3 cup (75 mL) loosely packed fresh mint leaves, chopped
1 tbsp (15 mL) grated orange peel
1/2 tsp (2 mL) salt
1 orange, peeled, sectioned and chopped
1/3 cup (75 mL) chopped walnuts, toasted
1/2 cup (125 mL) crumbled feta cheese
To Toast Walnuts : Spread in ungreased shallow pan. Bake uncovered at 350F 6 to 10 minutes, stirring occasionally, until golden brown.
