Cupcakes
1 box Betty Crocker* SuperMoist* Lemon Cake Mix
1 box (4-serving size) lime-flavoured gelatin
3/4 cup (175 mL) water
1/3 cup (75 mL) Key lime juice
1/3 cup (75 mL) vegetable oil
3 eggs
1 or 3 drops green food colour, if desired
Glaze
1 cup (250 mL) icing sugar
2 to 2 1/2 tbsp (25 to 33 mL) Key lime juice
Frosting
1 pkg (250 g) cream cheese, softened
1/4 cup (50 mL) butter or margarine, softened
1 tsp (5 mL) vanilla
3 1/2 cups (875 mL) icing sugar
Grated lime peel, if desired
Kitchen Tip : You can use fresh or bottled Key lime juice. If Key lime juice is not available, use regular fresh or bottled lime juice.Kitchen Tip : Garnish each cupcake with a small piece of jellied lime candy slice instead of the lime peel.
